I am buying some Ayam hens that are 2... how old when they quit producing eggs? Not just the weird 6 month break but stop production.

There is no set time. If they are not originating from a hatchery they can lay until they're 8 years old. Not saying the eggs will ever be fertile at that age but they can lay that long.

Most of my birds laid until they were five years old.

Would you feel comfortable buying 2-3 year old birds?

Two years old without a doubt. Three is kind of an iffy maybe if the price is right. If you get chicks from the three year old then it was worth the price.

Fertility seems to drop by five years old. That isn't written in stone since every bird is different.

Robin is right, 3 yrs old is iffy, still possible but the hatch rate might be sketchy. After that the rate drops. As for laying eggs they can lay until they die but not usually, usually by 4 and a half or 5 yrs old, they are done. Their peak laying years are 1 and a half to 3 yrs old then it drops off, you may get 2 or 3 eggs a week after 3 and a half yrs old, 1 or 2 a week at 4 yrs old then 1 egg every now and then at 5 yrs old
